 I am overwhelmed by the resources of this program. Could you give me an idea of how to do an Easy Scan for bullish engulfing pattern with present volume at least 2 times average over the past thirty days.

 First, watch this video about how to find Bullish Engulfing Patterns.

Use PCFs and EasyScan to find Bullish Engulfing Candlesticks

Then you will need to create the following PCF:

V>=(AVGV30*2)

Use this PCF to sort your Bullish Engulfing stocks.
