How do I pull up a 3m chart of let's say May 1st 2015?

The charts in TC2000 version 12 start each trading day with the most recent 500 bars of data and then add new bars (if any) to that throughout the trading day.
There is no way to scroll back to view older data in the time frame than was available at the start of the trading day. The only way to view older data is to switch to a longer time frame.

You would generally be able to do this using StockFinder Platinum. When you first install StockFinder Platinum and download the intraday data it will only going back a few months. But if you keep using StockFinder and don't re-install or move to a new computer, it will keep adding new intraday data.
So how far back you can go in StockFinder is going to depend on how long you have had StockFinder installed. My intraday data in StockFinder goes back to October 1, 2008.
