How is the Moving Average determined? Although 20 day 30 day 10 day etc. are most commonly used, I notice quite a variety in the various charts. Do you just keep randomly experimenting until you get the results you desire?

The period of any indicator, including moving averages, is a personal choice. You will want to find periods that match you own trading/analysis style. Here are two videos on moving averages that may help you in your journey:
