How do I use an existing easy scan, make some changes and save under a new esay scan name?

You can click the "Make a Copy of this Scan" icon to the right of scan name in the EasyScan list.  If you already have the scan open, click the Change List/Scan Properties button in the top right corner of the scan window (it's the middle button between teh disk icon and the Symbol link icon) and select Save EasyScan As...
